Ingredients
 -1-1.5 cups quick-cooking oats
 -0.5 cup creamy peanut butter
 -0.5 cup chia seeds
 -0.5 cup honey
 -0.25 cup vanilla
 -0.25 cup unsweetened shredded coconut
 
 Directions
 In a large bowl, combine the first six ingredients. Refrigerate one hour or until firm enough to roll. Shape into 1-1.5-inch balls. Roll in additional coconut if desired. Store in refrigerator.
